The best option is to go on horseback..
The birds/animals rely on a trigger, the trigger has a set radius around the source. and then there is a minimum delay that you need to be in the area, it is around 12 seconds... so if you chase around on the map you might miss all the sounds..
The default sounds is still in the map and can be heard basically all the time anywhere on the map, but the added birds/animals are at set locations. So they will be only at that spot... the radius is big so you wont miss them on foot or horseback.
The birds/animals are also in their common environment... well i tried to be a bit specific :)
So here is the complete list:

4. Hadida (plenty of those around in SA)
5. Woodpecker (Red nose)
6. Kiewiet
7. Kwevoel (Go away bird)
8. Night Owl (Nighthawk or Nightjar)

10. Tarrentaal ( Guinea fowl)
11. Witborskraai (Pied Crow)
12. Bosduif (Turtle Dove)
13. Fish Eagle (Famous SA Eagle)
14. Yellow Finch (Geelvink)
15. Baboon
16. Jackal
17. Vervet Monkey (Blou Apies)
Remember night animals will not beheard in the day... and some animals like baboons only start at around 10am... each animal/bird starts and stops at certain appropriate times.
